Starting early, the day progresses after the decisions & List have been made!
All of this is done during morning coffee, & Dijiner, today it’s just some bread and a dap of jam, You know the difference between “jelly & jam”, Jelly is made with juice, & jam is made with fruit.
So today We are planning to cook a Diner of Sausage sauce piquant.
2 pounds of pure pork smoked sausage,(MSG free) ask for it today.
1 can diced tomato
1 can Ro-tel, original
1 chopped small onion
1/2 cup chopped bell pepper
1/2 cup chopped celery
1/2 cup oil
1/2 cup flour, to make a roux
this meal is a simple seasoning sauce, the sausage, the greens, the Ro-tel, the roux for thickness, ( you know Cajuns like their sauce to stick to their rice)
We’ll season to taste, Black pepper, salt, cayenne.
I begin with cooking my sausage , place in your black pot, cover with water and bring to a boil, fry down until it sizzles, and add a 1/2 cup and lower heat, cover and let cook, for 5-10, (don’t burn your casing). Remove and set aside.
So lets add our oil & flour to our Dutch oven, (black pot), make a nice roux, lightly brown, add you chopped up greens, cook until it’s wilted, add your tomatoes, Add you sausage I leave my in a rope, or cut to size, Cover and simmer for 1 hour. We’ll serve this over rice covering it with this great sauce piquant sauce!
We’ll do 3’s as always, and a crusty French bread with a Pat (Butter). A little something sweet, and our Traditional fresh brewed coffee.
