Today is the longest day of the year, the official first day of summer. they say the sun is directly over the Tropic of Cancer, making it the longest day of the year, with a stretch of 17 hours of daylight.

So it begins and what to do with all that daylight, Well here on the bayou it’s raining, so you know what that means, “make a roux”!

Now what you do with that roux is the real question ?’’

Let’s think about what we haven’t had in a while, you know how it is you go to the grocery and it all begins to look the same. The meats, chicken, fish , the sides, and even the sweets, So we came up this am with something we haven’t had in a while.

 Á l’ étouffée,” is the way of cooking food in a small amount of liquid, covered over a low heat.

Here in Cajun Country,  étouffée refers to our Cajun dishes of seafood, chicken, wild game & seasoning vegetables, served over rice, you can use tomato,(Creole) 0r butter  roux, (Cajun), today we are using a light butter roux, for our Crawfish.

Ingredients:

2 pounds crawfish tail meat, (fat included)

1/4 pound of butter

1 cup of flour

1 cup chopped (fine) onions

1/2 cup chopped (fine) celery

1/2 cup chopped (fine) green bell pepper

1/2 cup chopped (fine) red bell pepper

1 cup chopped (fine) green onion tops

1/2 cup chopped (fine) parsley

2 quarts shellfish stock

 1/4 tsp smoked Paprika

we’ll season to taste with black pepper, salt, cayenne, smoked paprika.

In your favorite black pot that you cook a sauce in, melt butter over your trinity, Saute’ until wilted, whisk in flour, lets stir until a light brown  roux is formed.

Lets add our stock until it’s the desired thickness, bring to a boil, reduce to a simmer, stirring occasionally, adjust with stock as needed, add green onions & parsley, add paprika, add you tail meat, season to taste,

Serve over fresh cooked rice, with a dash of your favorite hot sauce, with you sides, I love a buttered/peppered corn, green beans, and a fresh butter milk coleslaw.
